Prepare the Chicken:

- Place the 6 chicken thighs in a large bowl.
- Season with salt, pepper, sweet paprika, oregano, garlic powder, and dried chili flakes.
- Add 2 tablespoons of olive oil and mix well to coat evenly.

Roast the Chicken:

- Line a baking tray with parchment paper.
- Arrange the seasoned chicken thighs on the tray.
- Bake in a preheated oven at 200°C (392°F) for 30 minutes.

Prepare the Topping:

- While the chicken is baking, dice the ½ red bell pepper, chop the spinach, and grate the mozzarella.
- In a bowl, mix the bell pepper, spinach, grated cheese, and 1 tablespoon of mayonnaise.
- Season with salt and pepper, and mix until combined.

Top and Finish Baking:

- After the initial 30 minutes of baking, remove the chicken from the oven.
- Spoon the creamy veggie topping onto each chicken thigh.
- Place tomato slices over the top.
- Return the tray to the oven and bake for another 10 minutes, or until the topping is golden and bubbly.
