Instructions
-
Prep the Chicken:
-
- Cut the chicken breasts into evenly sized cubes (not too big, not too small) for even cooking.
- Place them in a large bowl and season with salt, black pepper, paprika, garlic powder, oregano, lemon juice, sour cream (or yogurt), tomato paste, and olive oil.
- Mix well until the chicken is well coated.
-
-
Soak the Chickpeas (Optional):
-
- If using chickpeas, soak them in water for a few minutes. This trick helps them stay tender and not dry out in the oven.
-
-
Assemble the Skewers:
-
- Thread the marinated chicken onto skewers (with or without chickpeas).
-
-
Bake:
-
- Line a baking tray with parchment paper and place the skewers on it.
- Bake in a preheated oven at 200°C (392°F) for 10 minutes, flip them, and bake for another 10 minutes.
- Optionally, you can grill them instead.
-
-
Prepare the Drizzle Sauce:
-
- Mix together chopped parsley, grated Parmesan, olive oil, and a pinch of paprika.
-
-
Serve:
-
- Drizzle the sauce over the hot skewers and serve with mashed potatoes or your favorite side dish.
