Soft, fluffy homemade sweet rolls filled with jam, made with a semolina-enriched dough for extra tenderness. Perfect for breakfast, dessert, or an afternoon treat.
Ingredients
For the Dough
70g semolina
180ml hot water
150ml warm milk
25g fresh yeast (or 1 sachet dry yeast)
2tbsp sugar (or to taste)
570g bread flour
1tsp salt
Vanilla extract (or rum extract, or preferred flavoring)
1 egg
100g butter, softened at room temperature
For Filling & Finishing
Jam of your choice
1 egg, beaten (for brushing)

Prepare the Semolina
Place the semolina in a bowl.
Pour over the hot water.
Stir well and leave to hydrate while preparing the remaining ingredients.

Activate the Yeast
In a large bowl, combine the warm milk, yeast, and sugar.
Mix until the yeast dissolves completely.

Make the Dough
Gradually add the flour to the yeast mixture.
Add the hydrated semolina (make sure it is warm, not hot).
Add the salt, vanilla extract, and egg.
Begin kneading until a dough starts to form.

Incorporate the Butter
Add the softened butter gradually while kneading.
Continue kneading for about 10 minutes, or until the dough becomes smooth and no longer sticky.

Let the Dough Rise
Lightly dust the dough with flour.
Cover and leave it to rise for about 1 hour, or until doubled in size.

Shape the Rolls
Divide the dough into 6 equal pieces.
Roll each piece into a round shape.
Place a spoonful of jam near the edge of each piece.
Seal well and roll up as shown, forming crescent-shaped rolls.

Brush and Bake
Place the rolls on a baking tray.
Brush generously with beaten egg.
Bake in a preheated oven at 200°C (390°F) until golden brown.
