  1. Prepare the Eggs
    1. Crack 3 eggs into a large bowl.

  2. Prepare the Tomatoes
    1. Slice the 3 small tomatoes into thicker slices, not too thin.
    2. Heat 1 tablespoon of oil in a frying pan over medium heat.
    3. Add the tomato slices to the pan and cook for about 1 minute to soften them.
  3. Add Spinach and Cheese
    1. Add about 2 handfuls of spinach to the pan with the tomatoes and let it cook for a minute until wilted.
    2. Sprinkle some grated cheese over the vegetables.
  4. Add the Eggs
    1. Pour the beaten eggs over the tomatoes, spinach, and cheese mixture in the pan.
    2. Cook on medium heat until the eggs are almost set.
  5. Add the Flatbread
    1. Place the flatbreads on top of the omelette.
    2. Once the omelette is almost done, carefully flip it over with a spatula to cook the other side for 1-2 minutes.
