Grandma’s Fried Flatbreads (Turte Prajite)

Ingredients
    For the Dough:
  • 1 kilogram bread flour
  • 370 milliliters warm milk
  • 10 grams yeast
  • 2 teaspoons sugar
  • 330 grams Greek yogurt
  • 1 teaspoon salt
  • 2 eggs
  • 20 milliliters oil
  • For the Cheese Filling (optional):
  • 250 grams sweet cow cheese
  • 250 grams feta cheese
  • 70 grams sugar (adjust to taste)
  • For Frying:
  • Vegetable oil (for frying)
Instructions
  1. Prepare the Dough:
    1. In a large bowl, add the flour and make a well in the center.
    2. Pour in the warm milk, yeast, and sugar. Mix slightly, taking a little flour from the edges.
    3. Let the yeast activate for 10 minutes.
    4. Add Greek yogurt, salt, and eggs, then start kneading.
    5. When the dough starts forming, add oil and knead for another 10 minutes until smooth.
    6. Cover the bowl and let the dough rise for 1 hour until doubled in size.
  2. Shape and Fry the Flatbreads:
    1. After the dough has risen, take small pieces and shape them into round discs.
    2. If making filled flatbreads, mix the cheese filling ingredients, place some in the center of a dough disc, fold it over, and seal the edges well.
    3. Heat oil in a deep pan over medium heat.
    4. Fry the flatbreads until golden brown on both sides.
    5. Place them on a paper towel to remove excess oil.
