Grandma’s Fried Flatbreads (Turte Prajite)
Ingredients
For the Dough:

kilogram bread flour

milliliters warm milk

grams yeast

teaspoons sugar

grams Greek yogurt

For the Cheese Filling (optional):

grams sweet cow cheese

For Frying:
Vegetable oil (for frying)
Instructions
Prepare the Dough:
In a large bowl, add the
flour
and make a well in the center.
Pour in the
warm milk
,
yeast
, and
sugar
. Mix slightly, taking a little flour from the edges.
Let the yeast activate for
10 minutes
.
Add
Greek yogurt, salt, and eggs
, then start kneading.
When the dough starts forming, add
oil
and knead for another
10 minutes
until smooth.
Cover the bowl and let the dough rise for
1 hour
until doubled in size.
Shape and Fry the Flatbreads:
After the dough has risen, take small pieces and shape them into
round discs

If making filled flatbreads, mix the
cheese filling ingredients
, place some in the center of a dough disc, fold it over, and seal the edges well.
Heat oil in a deep pan over
medium heat

Fry the flatbreads until
golden brown
on both sides.
Place them on a paper towel to remove excess oil.
