  1. Prepare the Sponge Cake:
      • Preheat your oven to 180°C (350°F).
      • In a large bowl, beat the 3 eggs with 180 grams of sugar for 5-7 minutes at high speed until the mixture triples in volume.
      • Add 200 ml of oil and continue mixing for another minute.
      • Stop the mixer and add 1 teaspoon vanilla essence and 200 ml of milk. Mix well to combine.
      • Sift together 370 grams of flour, 10 grams of baking powder, and 2 tablespoons of cornstarch. Gradually incorporate them into the mixture using a spatula or mixer until smooth.
      • Line a 35x24 cm baking pan with parchment paper (or grease it if you don’t have parchment).
      • Pour the sponge cake batter into the prepared pan and level it evenly.
  2. Prepare the Cream Cheese Filling:
      • In a separate bowl, mix 250 grams of cream cheese with 2 tablespoons of sugar and 1 egg until smooth and creamy.
  3. Assemble the Cake:
      • Pour the cream cheese mixture on top of the sponge cake batter in the pan, spreading it evenly.
      • Scatter 200 grams of raspberries and 100 grams of blueberries on top of the cake.
  4. Bake:
      • Place the pan in the preheated oven and bake at 180°C (350°F) for about 40 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
  5. Cool and Serve:
      • Allow the cake to cool before slicing and serving. Enjoy this delicious treat with your family!
