  1. Prepare the Batter
    1. Crack the 5 eggs into a large mixing bowl.
    2. Add 180 g of sugar and beat at high speed for 5–7 minutes, until the mixture triples in volume. This step is crucial since no baking powder is used.
    3. Add the lemon zest and vanilla extract (if using).
    4. Gently fold in 30 ml of oil using a spatula.
    5. Gradually add the sifted flour in two batches, folding gently from bottom to top after each addition. Avoid overmixing to keep the batter airy.
  2. Prepare the Pan
    1. Grease a baking pan with 1 tbsp of butter (or oil and flour as an alternative).
    2. Pour in the batter and smooth it evenly with a spatula.
  3. Add Fruit
    1. Wash, clean, and slice your chosen fruits.
    2. Evenly distribute the fruit slices on top of the batter.
  4. Bake
    1. Bake in a preheated oven at 180°C (356°F) for about 30–40 minutes, or until it passes the toothpick test (a toothpick inserted in the center comes out clean).
