Prepare the Batter
- Crack the 5 eggs into a large mixing bowl.
- Add 180 g of sugar and beat at high speed for 5–7 minutes, until the mixture triples in volume. This step is crucial since no baking powder is used.
- Add the lemon zest and vanilla extract (if using).
- Gently fold in 30 ml of oil using a spatula.
- Gradually add the sifted flour in two batches, folding gently from bottom to top after each addition. Avoid overmixing to keep the batter airy.

Prepare the Pan
- Grease a baking pan with 1 tbsp of butter (or oil and flour as an alternative).
- Pour in the batter and smooth it evenly with a spatula.

Add Fruit
- Wash, clean, and slice your chosen fruits.
- Evenly distribute the fruit slices on top of the batter.

- Bake in a preheated oven at 180°C (356°F) for about 30–40 minutes, or until it passes the toothpick test (a toothpick inserted in the center comes out clean).
