  2. Make the dough:
      • Add 350 g bread flour and salt to the bowl.
      • Mix until a dough starts to form.
      • Gradually add 40 ml sunflower oil while kneading.
      • Knead until the dough is soft and non-sticky.
      • Cover the bowl and let the dough rise for about 1 hour, or until it triples in volume.
  3. Prepare the filling:
      • In a separate bowl, mix:
        • 150 g grated mozzarella
        • 100 g chopped feta
        • 1 finely chopped green onion (optional)
      • Set aside.

      • Once the dough has risen, punch out the air and form it into a ball.
      • Divide the dough into 8 equal pieces.
      • Shape each piece into a small ball.
  5. Assemble the buns:
      • Lightly butter each dough ball.
      • Flatten each one with your hands.
      • Place a spoonful of the filling in the center.
      • Fold, seal, and roll into dumpling or bun shapes.
      • Place the buns on a baking tray lined with parchment paper.
      • Cover and let them rest for 30 minutes.
  6. Egg wash & toppings:
      • Mix 1 egg yolk with 2 tablespoons milk.
      • Brush each bun with the egg wash.
      • Optionally, sprinkle with sesame seeds, poppy seeds, or coarse salt.
  7. Bake:
      • Bake in a preheated oven at 170°C (340°F) until the buns are golden and shiny on top.
These fluffy buns are perfect for breakfast, brunch, or as a snack, served warm or at room temperature.
