Prepare the Apple Filling
- Wash, peel, and grate the 4 apples.
- In a bowl, mix the grated apples with 1 tablespoon of sugar and 1 teaspoon of cinnamon (optional). Stir well and set aside.

Make the Roulade Crust
- Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper.
- In a large bowl, crack 5 eggs and add a pinch of salt.
- Add 150 g of sugar and mix the ingredients together for a few minutes, until the mixture doubles in volume and changes color.
- Slowly pour in 30 g of melted butter and mix for another minute.
- Gradually incorporate 150 g of flour, adding it in two rounds, mixing gently with wide motions. Avoid overmixing to ensure the dough stays light and fluffy.

Assemble the Roulade
- Spread the grated apples evenly on the bottom of the lined baking tray.
- Pour the prepared batter over the apples, spreading it evenly across the surface.

- Place the tray in the preheated oven and bake at 160°C (320°F) for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
