Soak the raisins in a large bowl by adding a tablespoon of rum essence and covering them with hot water. Set aside.

Add the Greek yogurt and lemon zest to the bowl with the cheese and mix well.

In another bowl, mix the sugar with the lemon zest using your fingers to release the oils from the zest.

Add the sugar mixture to the cheese and yogurt in the first bowl and crack the eggs into the same bowl.

Add the vanilla essence and mix all the ingredients well.

Add the salt and sifted flour, and continue mixing until the mixture is homogeneous.

Add the drained raisins and gently mix.

Grease a tray with butter and cover the pan with semolina. Place the mixture in the tray.

Place the tray in the preheated oven at 180 degrees Celsius and bake until it browns nicely on top.
