  1. Prepare the Filling
    1. Heat a little olive oil in a pan and add 2 large chopped onions. Cook until softened.

    3. Grate 3 carrots and 1 piece of celery, and add them to the pan with the onions and garlic. Cook until softened.
    4. Add 1 chopped capia pepper and cook for a few more minutes.
    5. Stir in half a can of rice and fry it for about 2-3 minutes.
    6. Add 100 ml of broth and season with salt. Cook for another 2-3 minutes.
    7. Remove from heat and add black pepper and a handful of chopped green parsley (or dried parsley).
  2. Prepare the Peppers
    1. Wash and clean 6-8 bell peppers, cutting off the tops and removing the seeds.
    2. Carefully stuff the peppers with the prepared filling, making sure not to overfill them.
  3. Fry the Stuffed Peppers
    1. Heat a little olive oil in a pan and lightly fry the stuffed peppers on all sides to give them a nice color and taste.
  4. Prepare the Sauce
    1. In a separate bowl, combine 300 ml of tomato juice, 2 teaspoons of sugar, salt, pepper, and 1 cup of water. Stir to combine.
  5. Cook the Peppers
    1. Place a few slices of celery at the bottom of a pot to prevent sticking.
    2. Arrange the stuffed peppers in the pot and pour the prepared sauce over them.
    3. Cover and let the peppers simmer for about 1 hour, until fully cooked and tender.
