Delicious Potato Omelette Recipe

  1. Prepare the Potatoes:
    • In a well-heated pan, add 2-3 tablespoons of oil.
    • Add the cubed potatoes and ½ cup of water.
    • Simmer the potatoes until they start to soften
  2. Add the Vegetables:
    • Finely chop the white part of the green onions.
    • Add the chopped white onions to the pan with the potatoes.
    • Add the finely chopped capia pepper (or any preferred pepper).
    • Season with salt and continue to simmer until the potatoes are tender.
  3. Prepare the Egg Mixture:
    • In a large bowl, break 3 eggs (adjust the number based on how many servings you want).
    • Season with salt and a little black pepper.
    • Add the chopped green part of the green onions.
  4. Combine and Bake:
    • Preheat the oven to 200°C (392°F).
    • Mix the cooked potatoes and vegetables with the egg mixture.
    • Prepare a baking tray with moistened baking paper to help it settle better in the pan.
    • Pour half of the egg and potato mixture into the baking tray and level it evenly.
    • Layer a few slices of ham on top of the first layer.
    • Pour the remaining egg and potato mixture over the ham.
  5. Bake:
    • Place the baking tray in the preheated oven and bake for about 25 minutes.
    • After baking, sprinkle a little cheddar cheese on top.
    • Let the cheese melt and serve the omelette warm.
