Creamy Minced Meat Pasta with Parmesan

  1. Prepare the base:
      • Heat a pan over medium heat and add 2 tablespoons of olive oil.
      • Add the finely chopped onion and garlic. Sauté for about 10 minutes until softened.
  2. Cook the vegetables & meat:
      • Add the finely chopped red bell pepper and cook for another 5 minutes.
      • Add the minced pork (or preferred meat) and cook until it changes color.
  3. Make the sauce:
      • Pour in the tomato juice and chicken broth (or water if broth is unavailable).
      • Season with salt, black pepper, and rosemary.
      • Let it simmer for about 15 minutes.
  4. Cook the pasta:
      • Meanwhile, boil the pasta in salted water according to package instructions.
      • Reserve a small amount of pasta water before draining.
  5. Combine everything:
      • Add 1 tablespoon of cream cheese to the sauce and mix well.
      • Toss in the drained pasta along with a little pasta water to help bind everything together.
      • Let it cook together for about 10 minutes, stirring occasionally.
  6. Serve & enjoy:
      • Serve hot, topped with plenty of grated Parmesan.
