Prepare the Batter Base
- In a large bowl, crack 5 whole eggs.
- Add 200 g sugar and beat using a mixer on high speed for about 5 minutes, until the mixture triples in volume and becomes pale.

Add Dairy and Flavor
- Add 500 g cottage cheese and 200 g melted butter.
- Incorporate well until the mixture is smooth.
- Add the zest of one organic lemon for extra flavor.

Mix Dry Ingredients
- In a separate bowl, mix 250 g flour with 10 g baking powder.
- Sift the dry ingredients and gently fold them into the wet mixture using a spatula.

- Pour the batter into a 20 cm diameter baking pan, lined or greased.
- Core and chop 2 apples into small pieces (or slice them, as you prefer).
