  1. Prepare the chicken mixture

    • Cut the chicken breasts into large pieces.

    • Place them in a blender and process until minced.

    • Line a baking tray with baking paper.

  1. Shape the chicken parcels

    • Spoon the minced chicken onto the tray, forming about 4 portions.

    • Flatten each portion with a fork into a square shape.

    • Season with salt and optional spices.

    • Set aside.

  1. Add the filling

    • Place 2 slices of cheese on one side of each chicken square.

    • Add cherry tomatoes on top.

    • Optionally, add salami for extra flavor.

  1. Close and coat the parcels

    • Using a wet spatula, fold and seal the chicken to form parcels.

    • Brush each parcel with beaten egg.

    • Sprinkle generously with panko breadcrumbs.
