Chicken Meatballs with Mozzarella

Ingredients
  • 400 grams minced chicken
  • 1 red onion (finely chopped, or yellow onion)
  • 1 red pepper (finely chopped)
  • A handful of fresh parsley (chopped)
  • 1 tablespoon chicken seasoning
  • Salt (to taste)
  • Black pepper (to taste)
  • Juice of half a lemon
  • 2 tablespoons breadcrumbs
  • Mozzarella (cut into cubes, small or large)
  • Sunflower oil (for frying)
Instructions
  1. Prepare the Meatball Mixture:
      • Finely chop the red onion and red pepper.
      • In a bowl, combine 400g minced chicken, chopped onion, chopped pepper, and a handful of chopped parsley.
      • Add 1 tablespoon chicken seasoning, salt, black pepper, and juice from half a lemon.
      • Incorporate everything well using your hands.
      • Add 2 tablespoons breadcrumbs to the mixture and mix again.
      • Cover the bowl and refrigerate for 30 minutes to let the flavors blend.
  2. Prepare the Mozzarella:
      • Cut the mozzarella into cubes (the size doesn't need to be exact, just small enough to fit inside the meatballs).
  3. Form the Meatballs:
      • Take a portion of the meat mixture, flatten it with your fingers, and place 1-2 cubes of mozzarella in the center.
      • Seal the meat around the cheese, making sure the mozzarella is completely enclosed to prevent it from melting out during frying.
  4. Fry the Meatballs:
      • Heat sunflower oil in a pan over medium heat.
      • Fry the meatballs for a few minutes on each side, until they are golden brown and cooked through.
  5. Serve:
      • Once cooked, remove the meatballs from the pan and place them on a paper towel to absorb excess oil.
