Cherry & Cream Cheese Cake
Ingredients
For the Dough:

yogurt

For the Cheese Filling:

eggs

egg yolk

Vanilla extract, to taste

Zest from 1 lemon

cream cheese

cherries or raisins, halved
Instructions

Prepare the Dough:
In a bowl, whisk together
1 egg, egg yolk, yogurt, sugar, cocoa powder, and baking powder
until smooth.
Gradually add
flour
and mix until well combined.
Cut in the
soft butter
and knead the dough until smooth.
Wrap the dough in plastic wrap and refrigerate for
1 hour
.

Prepare the Cheese Filling:
In a separate bowl, whisk together
3 eggs, egg yolk, sugar, vanilla extract, and flour
until smooth.
Add the
lemon zest
and
cream cheese
and mix until well combined.
Gently fold in the
cherries or raisins
.

Assemble the Cake:
Preheat your oven to
180°C (350°F)
.
Roll out the chilled dough on a floured surface and press it into the base of a baking pan.
Pour the
cheese filling
over the dough.

Bake the Cake:
Place the cake in the preheated oven and bake for
1 hour
or until the top is golden brown.

Cool and Refrigerate:
Allow the cake to
cool down
completely.

refrigerate overnight
