Cheesy Bacon & Mushroom Bake

Ingredients
  • 300 grams bacon or Kaiser
  • 3 tablespoons cooking oil
  • 1 medium onion, chopped
  • 3 spring onions (white part for cooking, green part for garnish)
  • 1 red pepper, diced (or any vegetable of choice)
  • 400 grams mushrooms, sliced
  • • A handful of cherry tomatoes, halved
  • Salt and black pepper, to taste
  • 150 grams crème fraîche
  • 50 milliliters water
  • 120 grams cheddar cheese (or any cheese of choice)
  • Parsley, for garnish
Instructions
  1. Heat 2-3 tbsp of oil in a pan over medium heat.
  2. Add the bacon and fry for 2-3 minutes, then remove it from the pan and set aside.
  3. In the same pan, fry the chopped onion and the white part of the spring onions for 2 minutes.
  4. Add the red pepper (or other vegetables of choice) and fry for another 2 minutes.
  5. Stir in the mushrooms and cook for 5 minutes, stirring occasionally.
  6. Add the cherry tomatoes, season with salt and black pepper, and mix well.
  7. Return the bacon to the pan and stir in the crème fraîche and water.
  8. Transfer the mixture to a baking dish and top with cheese.
  9. Bake in a preheated oven at 180°C (350°F) for 20 minutes
  10. Garnish with chopped green spring onions and parsley before serving.
