  1. Prepare Vegetables:
    • Chop the onion into small pieces.
    • Dice the celery stalks and bell peppers.
    • Peel and dice 2 carrots, and grate the remaining carrot.
  2. Fry Vegetables:
    • Heat a little oil in a saucepan.
    • Fry the chopped onion for 2 minutes.
    • Add diced carrots, peppers, and celery, and fry for another 2-3 minutes.
  3. Prepare Cauliflower:
    • Wash and clean the cauliflower thoroughly.
    • Break it into smaller florets and set aside.
  4. Cook Soup:
    • Once the vegetables are fried, pour in about 2-3 liters of water.
    • Add the cauliflower florets to the pot.
    • Season with salt to taste.
    • Allow everything to come to a boil and then simmer until vegetables are tender.
  5. Prepare Soup Mixture:
    • In a separate bowl, pour about 150 ml of fasting cream.
    • Gradually add some hot soup to the cream to temper it.
    • Once tempered, pour the cream mixture into the soup.
    Optionally, add borscht for additional flavor (if desired). Allow the soup to come to a boil once again.
  6. For serve:
    • Ladle the hot soup into bowls.
    • Garnish with black pepper and optionally, hot pepper for extra heat.
