Braised Chicken with Polenta and Garlic Sauce

Ingredients
  • 1 whole chicken (cut into pieces)
  • Oil (for frying)
  • Salt and black pepper (to taste)
  • A few garlic cloves (peeled and grated)
  • Parsley (fresh, for garnish)
  • Chicken soup (for braising and garlic sauce)
  • 4 tablespoons of polenta (for the polenta)
  • Water (for the polenta)
Instructions
  1. Prepare the Chicken:
      • Cut the whole chicken into pieces.
      • Place the chicken pieces in a pot, cover with water, and bring it to a boil.
      • Once the foam begins to form, remove it.
      • Take the legs and wings out of the pot and set them aside on a plate.
  2. Fry the Chicken:
      • Heat a little oil in a pan and fry the chicken pieces until they are nicely browned.
      • Turn the chicken pieces to ensure they are evenly cooked.
  3. Make the Garlic Sauce:
      • Peel and grate a few garlic cloves.
      • Use a pestle and mortar (or a spoon) to mash the garlic into a paste.
      • Gradually add oil while mashing the garlic to make a smooth paste.
      • Add a little bit of cold chicken soup to the garlic paste and mix well.
      • Garnish with fresh parsley.
  4. Braised Chicken:
      • Once the chicken is browned, add 1 cup of chicken soup into the pan.
      • Cover and cook for a few more minutes, allowing the chicken to braise in the soup.
  5. Prepare the Polenta:
      • Boil water in a separate pot.
      • Gradually stir in 3-4 tablespoons of polenta until the mixture thickens to your desired consistency. Season with a little salt if needed.
  6. Assemble the Dish:
      • Once the chicken is cooked and the polenta is ready, serve the braised chicken with a generous amount of garlic sauce on top, alongside the polenta.
