• Cut the pork ham into 3–4 manageable pieces.
• Place them in a large pot and cover completely with cold water.

Add Aromatics and Spices
• Add thyme, rosemary, bay leaves, garlic cloves, mustard, peppercorns, coriander, and salt.
• Place the scored onion into the pot for extra flavor.

Boil the Ham
• Cover with a lid and simmer over medium heat for about 1 hour, until tender.
• Once cooked, let the meat cool completely in the broth to absorb flavor and stay juicy.

Season the Cooled Ham
• After cooling, transfer the ham to a clean bowl and refrigerate overnight.
• In a small bowl, mix the salt, pepper, paprika (sweet and smoked), garlic powder, and oil.
