Apple & Peanut Butter Cake with Whipped Cream

For the Apple Layer:

Instructions

Prepare the Apples:
In a pan, cook the
apples, lemon juice, sugar, and cinnamon
over
medium heat for about 7 minutes
, until soft.
Set aside to cool.

Make the Cake Batter:
In a bowl, beat
eggs and sugar
until
doubled in size
(about
4 minutes
).
Add
vegetable oil
and mix for
1 more minute
.
Gradually incorporate the
cake flour
, mixing gently.

Bake the Cake:
Preheat the oven to
170°C (340°F)

Grease a cake pan with
butter
and pour in the batter.
