  1. Prepare the Apples

    • Wash, peel, and grate the apples.

    • Place the grated apples in a pan over medium heat.

    • Cook just until the juice evaporates, keeping the apple texture intact (do not mash).

    • Sprinkle 2 tablespoons of sugar over the apples.

  1. Prepare the Sponge Cake Batter

    • In a large bowl, combine:

      • Orange juice

      • Oil

      • Sugar

      • Vanilla essence

      • Lemon peel

      • Salt

    • Mix well.

    • Gradually add baking powder and flour in batches.

    • Stir until smooth and lump-free.

  1. Assemble the Cake

    • Line a large oven-resistant tray with baking paper.

    • Pour 3/4 of the sponge cake batter into the tray.

    • Spread the prepared apples evenly on top of the batter.

    • Optionally, gently cover the apples with the remaining batter or leave them visible.
