Apple and Walnut Croissants

Ingredients
  • 140 milliliters warm water
  • 10 grams dry yeast
  • 1 tablespoon sugar
  • 250 grams flour
  • A pinch of salt
  • 30 grams butter (room temperature)
  • 5 medium-sized apples (peeled and cubed)
  • 2 tablespoons brown sugar (or caster sugar)
  • Ginger (to taste)
  • Cinnamon (to taste)
  • Juice of half a lemon
  • 100 grams walnuts (half grated, half chopped)
  • Oil (for greasing)
  • 1 egg yolk
  • 2 tablespoons milk
Instructions
  1. Prepare the Dough:
      • In a large bowl, combine 140 ml warm water, 10 g dry yeast, and 1 tablespoon sugar. Mix well.
      • Add 250 g flour, a pinch of salt, and 30 g butter. Knead the dough for 10 minutes until it becomes smooth and elastic.
      • Let the dough rise for 1 hour.
  2. Prepare the Filling:
      • Peel and cube 5 apples.
      • In a bowl, add 2 tablespoons brown sugar, a pinch of ginger, cinnamon, and the juice of half a lemon. Mix well.
      • In a pan, heat the apple mixture for 2-3 minutes until softened and slightly colored. Set aside to cool.
  3. Prepare the Walnuts:
      • Chop 50 g walnuts finely and grate the remaining 50 g for decoration.
  4. Shape the Croissants:
      • Once the dough has risen, grease the countertop with a bit of oil.
      • Divide the dough into pieces and roll each into a ball.
      • Roll each ball into a flat circle with your fingers.
      • Add the apple mixture to the edges of each dough circle.
      • Slice the remaining dough and roll it into croissants.
      • Place the rolled croissants in a baking tray lined with baking paper.
  5. Add the Finishing Touch:
      • Brush the croissants with a mixture of 1 egg yolk and 2 tablespoons milk.
      • Sprinkle grated walnuts on top.
      • Let the croissants rise for 10 minutes.
  6. Bake:
      • Preheat the oven to 200°C and bake the croissants until golden brown on top, about 20-25 minutes.
