Oven-Baked Zucchini with Mushrooms, Ham, and Cheese

  1. Prepare the Mushrooms:
      • Heat 2-3 tablespoons of vegetable oil in a pan.
      • Slice 5 mushrooms and add them to the pan. Sauté for 1-2 minutes or until their color changes. Set them aside on a plate.
  2. Prepare the Zucchini:
      • Slice 1 medium zucchini into 4-5 slices, each about half a centimeter thick.
      • Grate 1 garlic clove (or more if you prefer stronger garlic flavor). Season with salt and pepper.
      • In the same pan, add 1 tablespoon of olive oil and fry the zucchini slices for 1-2 minutes or until they are nicely browned on both sides. Season with salt and pepper.
  3. Assemble the Dish:
      • Preheat your oven to 200°C (392°F).
      • Grease a baking tray with 2-3 tablespoons of olive oil.
      • Start by layering zucchini slices at the bottom of the tray.
      • Add a layer of chicken ham (or your preferred deli meat), then sautéed mushrooms, and a handful of grated cheese.
      • Sprinkle over some chopped fresh or frozen parsley and optionally, some chili flakes for a little heat.
      • Repeat the layering with another row of zucchini, mushrooms, ham, cheese, and parsley.
  4. Bake the Dish:
      • Drizzle with a bit more olive oil and bake in the preheated oven at 200°C (392°F) for 20 minutes, or until the zucchini is tender and the cheese is melted and golden.
  5. Serve & Enjoy:
      • Let the dish cool for a few minutes before serving.
