Instructions
-
Prepare the Zucchini Base
- Coarsely grate the zucchini and sprinkle it with a little salt.
- Mix well and let it sit for 5 minutes to release its moisture.
- Squeeze out as much liquid as possible with your hands and return the zucchini to a large bowl.
- Add the eggs, grated carrot, grated cheddar, chopped dill, flour, paprika, and a little more salt.
- Mix everything until well combined.
-
Bake the Zucchini Sheet
- Line a baking tray with parchment paper.
- Spread the zucchini mixture evenly over the tray, smoothing the surface.
- Bake in a preheated oven at 200°C (400°F) until lightly golden and set.
-
Cook the Beef Filling
- Place the ground beef in a hot dry pan (no oil needed).
- Cook until it changes color.
- Add the chopped onion and a little salt.
- Continue cooking until the beef is fully cooked and the onion is soft.
- Remove from the heat and let it cool slightly.
-
Assemble the Roll
- Once the baked zucchini sheet has cooled enough to handle, spread a layer of cream cheese over the surface.
- Evenly distribute the cooked beef mixture on top.
- Arrange the cheese slices over the beef.
-
Roll and Serve
- Carefully roll everything up tightly, using the parchment paper to help if needed.
- Slice and serve warm.
Pair it with a fresh salad or a dollop of garlic yogurt sauce for a complete meal.
