A traditional Transylvanian-style soup made with smoked meat, soft lettuce, fluffy omelette pieces, and a creamy, garlicky finish.
Lettuce Sour Soup (Ciorbă de Salată)

Prepare the Smoked Meat
• Slice the smoked ham into thin strips.
• Fry in a pot for a few minutes until lightly browned.
• Remove to a plate and set aside.

Start the Flavored Base
• In the same pot, add chopped onion and garlic.
• Cook 2–3 minutes until soft.
• Add 1 tablespoon flour and cook briefly.
• Pour in 1 cup cold water and mix well to avoid lumps.

Build the Soup
• Add back the fried ham.
• Fill the pot with water.
• Let it come to a boil.
• Prepare the lettuce by washing and cutting it into strips.

Add Lettuce & Season
• Once the base has boiled, add salt and pour in the borscht.
• Let the soup boil while preparing the omelette.

Make the Omelette
• Whisk eggs with cream, salt, and pepper.
• Cook into a thin omelette.
• Slice or cut into strips or cubes.

Add Lettuce
• Add the chopped lettuce to the soup.
• Cook for about 5 minutes.

Prepare the Cream Mixture

• Mix cooking cream with crushed garlic and dill.
• Temper by adding several ladles of hot soup while stirring.
• Pour the mixture back into the pot.
