Classic Chicken Soup with Noodles

  1. Cook the Chicken:
      • Place the chicken back, wings, and breast in a pot and cover with water. Bring to a boil.
      • Mark the onion with a knife and add it to the pot along with the celery (cut into smaller pieces) and a teaspoon of salt.
      • Boil the chicken and vegetables for about 40 minutes to infuse the flavors.
  2. Prepare the Vegetables and Meat:
      • Finely chop the parsley for garnish and set aside.
      • Once the chicken has cooked, remove the meat and vegetables from the pot.
      • Allow the meat to cool, then shred it from the bones. Discard the bones and keep the meat aside.
      • Slice the cooked carrots into thin rounds or cubes and set aside.
  3. Finish the Soup:
      • Return the chicken broth to the pot. Add the shredded chicken, sliced carrots, and 2 cloves of finely chopped garlic.
      • Let the soup boil for about 5 minutes.
  4. Serve:
      • Add cooked noodles to the bowl (either store-bought or homemade).
      • Pour the hot soup over the noodles and garnish with fresh parsley and freshly ground black pepper.
