Prepare the Eggs
- Crack 3 eggs into a large bowl.
- Season with salt, pepper, and any other spices you like (optional).
- Whisk everything together well and set aside.

Prepare the Tomatoes
- Slice the 3 small tomatoes into thicker slices, not too thin.
- Heat 1 tablespoon of oil in a frying pan over medium heat.
- Add the tomato slices to the pan and cook for about 1 minute to soften them.

Add Spinach and Cheese
- Add about 2 handfuls of spinach to the pan with the tomatoes and let it cook for a minute until wilted.
- Sprinkle some grated cheese over the vegetables.
