A healthy, flavorful zucchini roll made without a drop of oil. The baked zucchini base is filled with creamy cheese, seasoned minced beef, and slices of cheese, then rolled into a delicious main course that's perfect for lunch or dinner.
Ingredients
For the Zucchini Base
1 large zucchini, coarsely grated
Salt, to taste
3 large eggs (or 4 small)
1 large carrot, grated
1 handful grated cheddar or cheese of choice
1 handful fresh dill, chopped
2tbsp lour
Sweet or hot paprika, to taste
For the Filling
400g ground beef
1 small onion, finely chopped
Salt, to taste
Cream cheese, for spreading
A few slices of cheese or cheddar

Prepare the Zucchini Base
Coarsely grate the zucchini and sprinkle it with a little salt.
Mix well and let it sit for 5 minutes to release its moisture.
Squeeze out as much liquid as possible with your hands and return the zucchini to a large bowl.
Add the eggs, grated carrot, grated cheddar, chopped dill, flour, paprika, and a little more salt.
Mix everything until well combined.

Bake the Zucchini Sheet
Line a baking tray with parchment paper.
Spread the zucchini mixture evenly over the tray, smoothing the surface.
Bake in a preheated oven at 200°C (400°F) until lightly golden and set.

Cook the Beef Filling
Place the ground beef in a hot dry pan (no oil needed).
Cook until it changes color.
Add the chopped onion and a little salt.
Continue cooking until the beef is fully cooked and the onion is soft.
Remove from the heat and let it cool slightly.

Assemble the Roll
Once the baked zucchini sheet has cooled enough to handle, spread a layer of cream cheese over the surface.
Evenly distribute the cooked beef mixture on top.
Arrange the cheese slices over the beef.

Roll and Serve
Carefully roll everything up tightly, using the parchment paper to help if needed.
Slice and serve warm.
