Ingredients
Slices of bread (or flatbreads/tortillas)
3 tablespoons tomato sauce
Salt (to taste)
Black pepper (to taste)
A pinch of oregano
Diced ham or luncheon meat (e.g., parizer)
Grated or diced cheese (e.g., cașcaval or mozzarella)
A few fresh spinach leaves (optional)
4 eggs
Instructions
Prepare the Sauce:
In a bowl, mix together the tomato sauce, salt, pepper, and oregano.
Stir well and set aside.
Assemble the Base:
Place slices of bread in an oven-safe dish or tray, covering the bottom completely.
If using flatbreads instead, place them flat to cover the base.
Add the Sauce & Toppings:
Spread the prepared tomato sauce evenly over the bread.
Add diced ham or parizer and sprinkle generously with cheese.
Add a few spinach leaves if using.
Add the Eggs:
Crack 4 eggs directly over the top, spacing them evenly.
Season with a little salt and pepper.
Bake:
Bake in a preheated oven at 200°C (392°F) until the eggs are cooked to your liking and the top is golden brown (around 15–20 minutes, depending on your oven).
