Ultimate Moist Chocolate Banana Cake | Tort de banane cu ciocolată și umiditate supremă

A delicious way to use up ripe bananas — rich, chocolatey, and irresistibly fluffy!

Ingredients
  • 2 large ripe bananas (or 3 small), mashed
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 100 grams butter (room temperature)
  • 120 grams sugar
  • 150 grams all-purpose flour
  • 40 grams cocoa powder
  • ½ tablespoons baking powder
  • 1 pinch of salt
  • 50 milliliters boiling water
  • 1 tablespoon sour cream
  • Dark chocolate (chopped or flakes, ~75–100 g)
  • Optional: a few teaspoons of chocolate cream (for center filling)
Instructions
  1. Prepare the Banana Base
      • In a large bowl or plate, mash the ripe bananas well with a fork.
      • Add a pinch of salt, the 3 eggs, and vanilla essence.
      • Mix everything together until smooth.
  2. Incorporate Butter
      • Add 100 g softened butter to the banana mixture.
      • Mix well until fully combined.
  3. Mix the Dry Ingredients
      • In a separate bowl, combine:
        • 150 g flour
        • 40 g cocoa powder
        • ½ tbsp baking powder
      • Stir to blend evenly.
  4. Combine Wet and Dry Mixtures
      • Add 120 g sugar to the banana-egg-butter mixture.
      • Gradually add the dry flour mixture.
      • Add 50 ml boiling water and 1 tbsp sour cream.
      • Stir until a smooth batter forms with no lumps.
  5. Add Chocolate
      • Fold in ¾ of the chopped dark chocolate using a spatula.
  6. Pour & Assemble
      • Pour the batter into a greased or lined cake tray.
      • Add a few teaspoons of chocolate cream into the center if using.
      • Sprinkle the remaining chocolate pieces on top.
  7. Bake
      • Bake in a preheated oven at 160°C (320°F) for 60 minutes or until a toothpick comes out clean from the center.
  8. Serve
      • Let cool slightly before slicing. Enjoy warm or at room temperature!
    This cake is perfect with a glass of milk or coffee — and it freezes well too!
