Tocană cu Ochiuri (Stew with Eggs)

Ingredients
  • 1 medium-sized onion, finely chopped
  • A few cloves of garlic, finely chopped
  • 1 tablespoon oil
  • medium-sized potatoes, chopped
  • Water (enough to cover the potatoes)
  • Salt, to taste
  • 2 handfuls of spinach (optional)
  • 2 mushrooms, finely chopped
  • 1 red pepper, diced
  • 150 milliliters liquid cream
  • 1 egg (per serving)
  • A sprig of cheddar cheese (optional, for garnish)
  • Pepper, to taste
  • Sweet paprika, to taste
Instructions
  1. Prepare the ingredients:
      • Finely chop 1 onion and a few cloves of garlic.
      • Chop 2 medium-sized potatoes and 2 mushrooms.
      • Dice 1 red pepper and 2 handfuls of spinach (optional).
  2. Sauté the aromatics:
      • Heat 1 tablespoon of oil in a pan.
      • Add the chopped onion and garlic and sauté for 2-3 minutes until soft and fragrant.
  3. Cook the potatoes:
      • Add the chopped potatoes to the pan with the onions and garlic.
      • Pour in enough water to cover the potatoes.
      • Season with salt and bring it to a boil. Let it cook until the potatoes are tender.
  4. Add vegetables:
      • Once the potatoes are cooked, add the chopped red pepper, mushrooms, and spinach (if using).
      • Let the mixture boil until the mushrooms reduce in volume and the spinach softens.
  5. Season the stew:
      • Season with pepper, sweet paprika, and mix everything well.
      • Add 150 ml of liquid cream and stir to incorporate.
  6. Prepare the eggs:
      • Break 1 egg over the top of the stew, letting it cook in the liquid for 5 minutes with the lid on.
  7. Serve:
      • Garnish with a sprig of cheddar cheese if desired.
      • Serve hot and enjoy!
