- Cut the smoked sausage into small sticks. In a large pot, fry the sausage until it gets some color.
- Chop the onion, leek, and red bell pepper. Add them to the pot with the sausage and sauté for 2-3 minutes.
- Peel and dice the potatoes. Add them to the pot along with the sausage. Pour in about 2 liters of water.
- Remembering to add the carrot and celery, peel and chop them into small pieces. Add them to the pot as well.
- Bring the soup to a boil and let it simmer for 30 minutes.
- Towards the end of cooking, add 3-4 tablespoons of tomato juice and season with salt and pepper to taste. You can also add some sour cream according to your preference.
- Once the soup is ready, garnish it with plenty of chopped parsley and lovage.
