Savory Puff Pastry Bites with Bacon, Spinach & Cheese

Ingredients
  • 1 sheet of puff pastry
  • 1 tablespoon cream cheese (per puff pastry half)
  • Grated cheddar cheese (or cașcaval)
  • 1 handful of spinach, roughly chopped
  • ½ red bell pepper, finely diced
  • A few slices of cooked bacon, chopped
  • A few slices of chicken ham or any deli meat
  • 1 egg yolk (for brushing)
  • Poppy seeds (for topping)
Instructions
  1. Cook the Bacon:
      • Fry the bacon slices in a pan until crispy.
      • Transfer to a paper towel and let cool.
      • Once cooled, chop into small pieces.
  2. Prepare the Fillings:
      • Grate the cheddar cheese (or substitute with cașcaval).
      • Roughly chop the spinach.
      • Dice the red bell pepper.
      • Cut the chicken ham into smaller pieces if necessary.
  3. Assemble the Pastries:
      • Preheat the oven to 200°C (392°F).
      • Line a baking tray with parchment paper.
      • Place the puff pastry on a work surface.
      • Spread cream cheese over half of the puff pastry sheet.
      • Sprinkle on grated cheese, chopped bacon, chicken ham, spinach, and red bell pepper.
      • Fold the other half of the pastry over the filling and press gently to seal.
  4. Cut and Finish:
      • Cut the filled pastry into bite-sized squares or desired shapes.
      • Place them on the prepared baking tray.
      • Brush the tops with egg yolk.
      • Sprinkle with poppy seeds.
  5. Bake:
      • Bake in the preheated oven for about 15 minutes, or until golden and puffed.
    Serve warm, optionally with a spicy mayo dip or your favorite sauce. Perfect for breakfast, brunch, snacks, or even as party bites!
