Salmon with Sweet and Sour Sauce and Baked Cheddar Potatoes | Somon cu sos dulce-acrișor și cartofi copți cu cheddar

Ingredients
    For the Salmon:
  • 4 pieces of salmon (cut into portions)
  • Salt (to taste)
  • Black pepper (to taste)
  • Sweet paprika (to taste)
  • 1 tablespoon of olive oil (for seasoning)
  • 2-3 tablespoons of olive oil (for frying)
  • For the Baked Potatoes:
  • Potatoes (as needed, peeled and sliced)
  • Salt (to taste)
  • Pepper (to taste)
  • 3-4 tablespoons of sour cream
  • 100 grams of cheddar cheese (grated)
  • For the Sweet and Sour Sauce:
  • 3-4 cloves of garlic (minced)
  • Butter (to taste)
  • Soy sauce (to taste)
  • 1 tablespoon of honey
  • Juice of 1 lemon
Instructions
  1. Prepare the Salmon
    1. Season the salmon pieces with salt, black pepper, sweet paprika, and 1 tablespoon of olive oil.
    2. In a well-heated frying pan, add 2-3 tablespoons of olive oil and place the seasoned salmon pieces skin-side down.
    3. Let the salmon cook, turning it halfway through, until it is golden brown on both sides and fully cooked.
  2. Prepare the Potatoes
    1. Peel and slice the potatoes into thin rounds.
    2. Boil the potatoes in water with a pinch of salt until they are tender and easily pierced with a fork.
    3. Once boiled, peel the potatoes (if needed) and cut them into thin slices.
  3. Assemble the Baked Potatoes
    1. In a baking dish, layer the sliced potatoes, seasoning each layer with a pinch of salt and pepper.
    2. Add a few spoonfuls of sour cream on top of the potatoes, then sprinkle grated cheddar cheese over each layer.
    3. Repeat the layering process until all the ingredients are used up.
    4. Place the dish in the preheated oven at 200°C (390°F) for about 40 minutes, or until the potatoes are golden and crispy on top.
  4. Make the Sweet and Sour Sauce
    1. In the same pan where you cooked the salmon, add 3-4 minced garlic cloves and a bit of butter.
    2. Once the garlic is fragrant, add soy sauce, 1 tablespoon of honey, and the juice of 1 lemon.
    3. Stir everything together and cook for 2-3 minutes until the sauce thickens slightly.
  5. Serve
    1. Serve the crispy baked potatoes alongside the salmon, drizzled with the sweet and sour sauce.
