Ingredients
    For the Cake:
  • 2-3 tablespoons butter (for greasing the tray)
  • 3 tablespoons sugar (for sprinkling in the tray)
  • 2 mandarin oranges (or smaller oranges, peeled and cut)
  • 5 large eggs
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 cup sunflower oil (or any vegetable oil)
  • 1 cup kefir (or yogurt)
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour
  • Zest of 2 oranges (grated)
Instructions
  1. Prepare the Tray
    1. Preheat the oven to 165°C (330°F).
    2. Grease a baking tray with 2-3 tablespoons of butter.
    3. Sprinkle 3 tablespoons of sugar evenly over the buttered tray.
    4. Peel and cut 2 mandarin oranges (or smaller oranges). Arrange them evenly in the tray. If using larger oranges, slice them.
    5. Set the tray aside.
  2. Prepare the Cake Batter
    1. Crack 5 large eggs into a large bowl.
    2. Add 1/2 cup sugar, 1/4 teaspoon salt, 1 cup oil, 1 cup kefir (or yogurt), and 1 teaspoon baking powder.
    3. Mix everything well using a whisk until fully combined.
    4. Grate the peel of 2 oranges and add it to the batter.
    5. Gradually incorporate 2 cups of flour into the batter, mixing until smooth and fully combined.
  3. Assemble the Cake
    1. Pour the prepared batter over the mandarin slices in the tray.
  4. Bake the Cake
    1. Place the tray in the preheated oven and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
  5. Serve
    1. Once baked, remove from the oven and let it cool slightly.
