For the Cake:
- 2-3 tbsp butter (for greasing the tray)
- 3 tbsp sugar (for sprinkling in the tray)
- 2 mandarin oranges (or smaller oranges, peeled and cut)

- 1/2 cup sugar
- 1/4 tsp salt
- 1 cup sunflower oil (or any vegetable oil)
- 1 cup kefir (or yogurt)
- 1 tsp baking powder
- 2 cup all-purpose flour
- Zest of 2 oranges (grated)

Prepare the Tray
- Preheat the oven to 165°C (330°F).
- Grease a baking tray with 2-3 tablespoons of butter.
- Sprinkle 3 tablespoons of sugar evenly over the buttered tray.
- Peel and cut 2 mandarin oranges (or smaller oranges). Arrange them evenly in the tray. If using larger oranges, slice them.

Prepare the Cake Batter
- Crack 5 large eggs into a large bowl.
- Add 1/2 cup sugar, 1/4 teaspoon salt, 1 cup oil, 1 cup kefir (or yogurt), and 1 teaspoon baking powder.
- Mix everything well using a whisk until fully combined.
- Grate the peel of 2 oranges and add it to the batter.

- Pour the prepared batter over the mandarin slices in the tray.

- Place the tray in the preheated oven and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
