Return the Chicken to the Pot:

- Once the soup is boiling, add the browned chicken back into the pot and cover with water if needed.
- Let the stew cook for about 30 minutes or until the potatoes and chicken are tender.
5 Thicken the Stew:

- Once the potatoes are soft, take a few of them out of the stew, mash them with a fork, and return them to the pot. This will help thicken the stew.
- Add a bit more soup if needed and stir well.
6 Finish the Stew:

- Sprinkle the chopped fresh parsley into the stew and stir everything together. Taste and adjust seasoning as needed.
7 Serve:

- Serve the potato stew hot, ideally with some pickles on the side, as is tradition.
