Potato Stew with Chicken (Tocăniță de Cartofi cu Pui)
Ingredients
3 pieces of chicken (your choice of cuts)
1 tablespoon of oil
1 tablespoon of butter
1 medium onion, chopped
2 carrots, grated (or cut into cubes)
1 stalk celery (cut into large pieces)
3 potatoes, chopped into small pieces
2 garlic cloves, finely chopped
1 bay leaf
Salt to taste (around 1 teaspoon)
Fresh parsley (chopped, for garnish)
Water (enough to cover the ingredients)
Instructions
Fry the Chicken:
Heat oil and butter in a pan. Add the chicken pieces and fry until they get a beautiful golden color. Once browned, remove the chicken from the pan and set it aside.
Prepare the Vegetables:
In the same pan, add the chopped onion, grated carrots, celery (cut into larger pieces), and garlic. Cook them until they soften a bit, about 2-3 minutes.
Add the Potatoes and Boil:
Add the chopped potatoes to the pan along with a bay leaf. Sprinkle a teaspoon of salt over the vegetables.
Add enough water to cover the ingredients and bring the mixture to a boil.
Return the Chicken to the Pot:
Once the soup is boiling, add the browned chicken back into the pot and cover with water if needed.
Let the stew cook for about 30 minutes or until the potatoes and chicken are tender.
Thicken the Stew:
Once the potatoes are soft, take a few of them out of the stew, mash them with a fork, and return them to the pot. This will help thicken the stew.
Add a bit more soup if needed and stir well.
Finish the Stew:
Sprinkle the chopped fresh parsley into the stew and stir everything together. Taste and adjust seasoning as needed.
Serve:
Serve the potato stew hot, ideally with some pickles on the side, as is tradition.
