Place the peeled and chopped potatoes in a pot.
Cover with water and add salt and a bay leaf.
Boil until just tender, not overcooked.
Drain well to remove excess water.
Mash the hot potatoes until smooth.
Add the butter and let it melt into the potatoes.
Add grated cheese to the mashed potatoes.
Season with a little salt, if needed.
Add the diced salami (or ham).
Mix everything well until evenly combined.
Lightly grease your hands with oil.
Take a portion of the mixture and flatten it in your palm.
Place a small cube of cheese in the center.
Close and shape it gently into a patty.
