Pork Stew with Vegetables and Tomato Sauce | Tocană de porc cu legume și sos de roșii

Ingredients
  • 500 grams pork meat (cut into chunks)
  • 1 tablespoon butter (for frying)
  • 1 medium-sized onion (finely chopped)
  • 3 green onions (finely chopped)
  • 1 carrot (finely chopped or grated)
  • 1 red pepper (finely chopped, or green if preferred)
  • 3 cloves garlic (finely chopped, adjust to preference)
  • 1 tablespoon paprika
  • 1 tablespoon tomato paste
  • 500 milliliters water (or chicken broth)
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt (to taste)
Instructions
  1. Prepare the Meat
    1. In a hot pan, melt 1 tablespoon of butter.
    2. Add 500 grams of pork meat and fry it until it turns golden brown. Once done, remove the meat from the pan and set it aside.
  2. Cook the Vegetables
    1. In the same pan, add the finely chopped onion and cook for 2-3 minutes until softened.
    2. Add the green onions, grated or chopped carrot, and red pepper. Fry everything for a few minutes.
  3. Combine Ingredients
    1. Add the rest of the garlic, paprika, salt, and mix everything together.
    2. Stir in 1 tablespoon of tomato paste and fry it a little to release the flavors.
    3. Return the pork to the pan, then add 500 ml of water (or chicken broth for extra flavor).
    4. Add 1 bay leaf, 1 teaspoon thyme, and salt to taste.
  4. Simmer
    1. Stir everything well and let it simmer on low heat for 30-40 minutes, until the meat is tender and the sauce has thickened.
