Polish Oven-Baked Schnitzels with Vegetables and Cheese | Șnițeluri poloneze la cuptor cu legume și brânză
Ingredients
For the Schnitzel Mixture:
2 red bell peppers (washed, deseeded, and finely chopped)
2 green bell peppers (washed, deseeded, and finely chopped)
A bunch of fresh green parsley (finely chopped)
200 grams of cedar cheese (or your preferred cheese, grated)
2 pieces of chicken breast (diced)
1 small pumpkin (cut into small pieces)
1 small can of sweet corn (drained)
2 tablespoons of flour
1 tablespoon of Greek yogurt (or your preferred yogurt)
4 large eggs (adjust depending on egg size)
Salt (to taste)
Black pepper (to taste)
For Baking:
Olive oil (for greasing and drizzling)
Instructions
Prepare the Ingredients
Vegetables: Wash and deseed the red and green peppers, then chop them finely.
Herbs and Cheese: Chop the parsley and grate the cedar cheese (or your choice of cheese).
Chicken and Pumpkin: Dice the chicken breast and cut the pumpkin into small pieces.
Corn: Drain the sweet corn from the can.
Prepare the Schnitzel Mixture
In a large mixing bowl, combine the chopped peppers, parsley, grated cheese, diced chicken, pumpkin pieces, and sweet corn.
Add the flour, Greek yogurt, and the 2 large eggs. Season with salt and black pepper.
Mix everything together until well combined. If the mixture seems too thick, add 2 more eggs (you should end up using a total of 4 large eggs, or 5 if your eggs are smaller).
Make sure the mixture is thick but not too dry— it should be spreadable.
Bake the Schnitzels
Preheat your oven to 200°C (392°F).
Lightly grease a baking tray with olive oil.
Pour the schnitzel mixture onto the tray, spreading it evenly across the surface.
Drizzle a little olive oil over the top for a nice golden finish.
Place the tray in the preheated oven and bake for approximately 30-40 minutes, or until the top is nicely browned and crispy.
Serve and Enjoy
Once the schnitzels are golden and fully cooked, remove them from the oven.
