Ingredients
For the Dressing
1 ripe avocado
Juice of ½ lemon
Salt, to taste
2tbsp Greek yogurt
2 cloves garlic, crushed or grated
1tbsp olive oil (or sunflower oil)
For the Salad
1 large head of lettuce, washed and chopped
1 small red onion, thinly sliced

Cut the avocado in half, remove the pit, and scoop the flesh into a large bowl.
Add the lemon juice and a pinch of salt.
Mash well with a fork until smooth.
Add the Greek yogurt and mix until creamy.

Wash and chop the lettuce into bite-sized pieces.

Thinly slice the red onion and separate the layers with your fingers.
