Ingredients
For the Potatoes and Vegetables:
4 medium-sized potatoes (cut into cubes)
1 red pepper (cut into rounds)
1 onion (sliced)
Olive oil

For the Chicken Rolls:
4 pieces of chicken breast (cut in half and beaten flat)
Mozzarella (or cheddar cheese, as preferred)

Water (a small amount for steaming)
Cheddar cheese (optional, for topping)

Prepare the Vegetables
Cut the potatoes into cubes.
Slice the red pepper into rounds and the onion into slices.
In a large bowl, mix the potatoes, red pepper, and onion together.
Season the vegetables with salt, black pepper, and sweet paprika.
Drizzle olive oil over the mixture and toss everything together until evenly coated.

Prepare the Chicken Rolls
Take the chicken breasts, cut them in half, and beat them flat using a meat mallet or rolling pin.
In a separate bowl, season the chicken with salt, black pepper, sweet paprika, and olive oil. Mix everything well.
Take each piece of seasoned chicken and place a small amount of mozzarella (or cheddar cheese) in the center.
Roll the chicken up tightly, securing the cheese inside.

Assemble and Bake
Transfer the seasoned vegetable mixture into a large oven-safe tray.
Place the chicken rolls on top of the vegetables.
Cover the tray with foil and pour a little water over the rolls to keep everything moist.
Preheat the oven to 200°C (392°F) and bake for about 1 hour.
After 1 hour, remove the foil, sprinkle some cheddar cheese on top of the rolls, and bake for an additional 10 minutes to melt the cheese and brown the top.
