“O Bunătate de Prăjitură Fără Zahăr” – Perfect for Diets & Guilt-Free Indulgence!

This light and naturally sweetened cake is made with ripe banana, coconut, and raspberries — no added sugar needed. It’s soft, moist, and comes together in just one bowl.

Ingredients
  • 1 ripe banana (approx. 120 g), mashed
  • 3 large eggs (or 4 smaller ones)
  • 150 grams Greek yogurt (or any yogurt you prefer)
  • 1 tablespoon vanilla essence
  • 70 grams shredded coconut
  • 1 teaspoon baking powder
  • 3 tablespoons flour (sifted)
  • 2 tablespoons oil (olive oil or any preferred oil)
  • 50 grams raspberries (fresh or frozen)
  • 6 pieces of white chocolate, finely chopped (optional for topping)
  • Optional: 1–2 tablespoons sugar (if you prefer it sweeter)
Instructions
  1. Prep the Tray:
      • Line a baking tray with baking paper and set aside.
  2. Mash Banana:
      • In a large bowl, mash the ripe banana using a fork until smooth.
  3. Add Wet Ingredients:
      • Add the eggs over the banana and mix well.
      • Pour in the Greek yogurt and vanilla essence.
      • Stir until the mixture is fully incorporated.
  4. Add Dry Ingredients:
      • Add shredded coconut and baking powder. Mix.
      • Sift in the flour and stir.
      • Add the oil and mix again until everything is combined.
      • Optional: Add sugar if desired.
  5. Assemble:
      • Pour the batter into the prepared tray.
      • Sprinkle raspberries evenly on top.
      • Add the finely chopped white chocolate pieces.
  6. Bake:
      • Bake in a preheated oven at 170°C (340°F) for about 40 minutes, or until a toothpick comes out clean.
