This heavenly no-bake dessert is creamy, rich, and takes under 10 minutes to prepare. It layers chocolate and vanilla biscuits with a caramel mascarpone cream for an irresistible treat that's perfect for any occasion.
Ingredients
500g mascarpone cheese (cold, straight from the fridge)
200ml heavy cream (whipping cream)
200g caramel sauce
Chocolate biscuits (enough for 2–3 layers)
Vanilla biscuits (some infused with Bailey’s cream if available, or regular caramel/vanilla cream biscuits)
A handful of chopped walnuts or hazelnuts (optional, for topping)
In a large bowl, gently mix the mascarpone with a spatula.
Add the heavy cream and gently fold until incorporated.
Add the caramel sauce and mix everything until smooth. You can use a mixer if preferred.

Layer the Cake:
In a rectangular or square dish, place a layer of chocolate biscuits.
Spread a third of the caramel mascarpone cream over the biscuits. Reserve 2–3 tablespoons for final decoration.
Add a second layer of vanilla biscuits. (You can use Bailey’s-infused ones or regular caramel-cream biscuits.)
Spread another third of the cream on top and level it gently.

Chop walnuts or hazelnuts and sprinkle them over the cream layer.
Add a third layer of vanilla biscuits.

Spread the remaining caramel cream on top.
Finish with a final layer of chocolate biscuits.

Drizzle caramel sauce on top, or prepare a chocolate glaze by melting 200g chocolate with 2–3 tbsp milk and pouring it over the top.
