- 500 g of new potatoes (washed well, with skin)
- 2 onions (finely chopped)
- 300 g of mushrooms (sliced)
- 2-3 tbsp olive oil
- 1 sprig rosemary (fresh)
- 3 cloves garlic (finely chopped)

Prepare the Potatoes
- Wash the 500 grams of new potatoes thoroughly, as you will be using them with the skin on.
- Place the potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt and 1 sprig of rosemary.
- Boil the potatoes until they are tender and a fork can pass through them.
- Once ready, drain and peel the potatoes using a knife or a teaspoon.

Sauté the Vegetables
- Heat 2-3 tablespoons of olive oil in a pan over medium heat.
- Add the 2 finely chopped onions and 1 cup of water to the pan. Cook the onions until they soften.
- Add the 3 finely chopped garlic cloves, 1 sprig of rosemary, and 300 grams of sliced mushrooms. Cook for a few minutes until the mushrooms are soft.

Combine and Season
- Add the peeled potatoes into the pan with the mushrooms and onions.
- Season with salt to taste and mix everything together.
- Cook for a few more minutes, allowing the flavors to blend.
