Cheese Mixture:
- 250 grams salted cheese
- 250 grams sweet cheese
- 350 grams cream cheese (or sweet cheese as a substitute)
- 4 tablespoons of sugar (adjust to taste)
- Zest of 2 lemons
- Vanilla essence, to taste
- 150 grams raisins (adjust to taste)
Liquid Mixture:
- 2 large eggs (or 3 small ones)
- 90 grams melted butter (or oil as a substitute)
- 400 grams condensed milk
- 300 milliliters milk
For Assembly:
- 8 sheets of pie dough
- Baking paper
- Prepare the Cheese Mixture:
- In a large bowl, combine 250g of salted cheese, 250g of sweet cheese, and 350g of cream cheese.
- Add 4-5 tablespoons of sugar, zest of 2 lemons, and a dash of vanilla essence.
- Mix well with a fork until smooth and combined.
- Stir in 150g of raisins and set aside.
- Make the Liquid Mixture:
- In another bowl, beat 2 large eggs well. If the eggs are small, use 3.
- Pour in 90g of melted butter or oil, and mix.
- Add 400g of condensed milk and mix well.
- Finally, incorporate 300ml of milk into the mixture
- Assemble the Pie:
- Preheat the oven to 200°C (392°F).
- Line a standard oven tray with baking paper.
- Lay 2 sheets of pie dough on the tray.
- Pour a ladle of the liquid mixture over the sheets.
- Place another 2 sheets of pie dough on top.
- Pour another ladle of the liquid mixture.
- Spread one-third of the cheese mixture evenly over the pie sheets using a spatula.
- Repeat the layering process until all the sheets and cheese mixture are used, finishing with the liquid mixture on top.
- Bake the Pie:
- Pour any remaining liquid mixture over the assembled pie.
- Bake in the preheated oven for about 30 minutes, or until the top is golden and the pie is set.
- Serve and Enjoy:
- Once baked, let the pie cool slightly before serving.
