Meatball and Potato Sandwich Bake

minced pork (or your preferred minced meat)

tbsp
breadcrumbs

cloves garlic (grated)

small onion (grated)
A handful of fresh parsley (finely chopped)

egg
Salt (to taste)
Black pepper (to taste)

medium-sized tomatoes (grated)
Salt (for seasoning)
Black pepper (for seasoning)
Garlic powder (a pinch)

medium-sized potatoes (cut into slices)
Paprika (to taste)
Thyme (to taste)
Rosemary (to taste)
Water (enough to cover the base of the pan)

Instructions

Prepare the Meatballs:
In a bowl, combine
400g minced pork

2 tablespoons breadcrumbs
,
2 grated garlic cloves
,
1 grated onion
, and
a handful of chopped parsley
.
Add
1 egg
,
salt
, and
black pepper
to taste.
Mix everything well with your hands until evenly combined.
Shape the mixture into meatballs and set them aside.

Make the Tomato Sauce:
Grate
6 medium-sized tomatoes
and place them in an oven tray.
Season with
salt

black pepper
,
garlic powder
, and
1 tablespoon olive oil
.
Mix everything well and set aside.

Prepare the Potatoes:
Slice the
potatoes
into rounds, neither too thick nor too thin.
Lay one slice of potato in the oven tray, add a
meatball
on top, and then cover it with another slice of potato, like a sandwich.

Assemble and Bake:
Place the assembled potato and meatball "sandwiches" in the tomato sauce.
Season with
salt

pepper

paprika

thyme
, and
rosemary
.
Add a little
water
(to help with cooking) and drizzle
2 tablespoons olive oil
on top.
Preheat your oven to
200°C (392°F)
and bake for
