• Slice the smoked ham into thin strips.
• Fry in a pot for a few minutes until lightly browned.
• Remove to a plate and set aside.
• In the same pot, add chopped onion and garlic.
• Cook 2–3 minutes until soft.
• Add 1 tablespoon flour and cook briefly.
• Pour in 1 cup cold water and mix well to avoid lumps.
• Add back the fried ham.
• Fill the pot with water.
• Let it come to a boil.
• Prepare the lettuce by washing and cutting it into strips.
• Once the base has boiled, add salt and pour in the borscht.
• Let the soup boil while preparing the omelette.
• Whisk eggs with cream, salt, and pepper.
• Cook into a thin omelette.
• Slice or cut into strips or cubes.
• Add the chopped lettuce to the soup.
• Cook for about 5 minutes.
