Juicy Oven-Baked Chicken Thighs with Creamy Veggie Topping

Ingredients
    For the Chicken:
  • 6 boneless chicken thighs (upper part)
  • Salt
  • Pepper
  • Sweet paprika
  • Oregano
  • Garlic powder
  • Dried chili flakes
  • 2 tablespoons olive oil
  • For the Topping:
  • ½ red bell pepper, diced
  • 1 handful of spinach, roughly chopped
  • Grated mozzarella (or cheddar, or any meltable cheese)
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste
  • 3 medium tomatoes, sliced
Instructions
  1. Prepare the Chicken:
      • Place the 6 chicken thighs in a large bowl.
      • Season with salt, pepper, sweet paprika, oregano, garlic powder, and dried chili flakes.
      • Add 2 tablespoons of olive oil and mix well to coat evenly.
  2. Roast the Chicken:
      • Line a baking tray with parchment paper.
      • Arrange the seasoned chicken thighs on the tray.
      • Bake in a preheated oven at 200°C (392°F) for 30 minutes.
  3. Prepare the Topping:
      • While the chicken is baking, dice the ½ red bell pepper, chop the spinach, and grate the mozzarella.
      • In a bowl, mix the bell pepper, spinach, grated cheese, and 1 tablespoon of mayonnaise.
      • Season with salt and pepper, and mix until combined.
  4. Top and Finish Baking:
      • After the initial 30 minutes of baking, remove the chicken from the oven.
      • Spoon the creamy veggie topping onto each chicken thigh.
      • Place tomato slices over the top.
      • Return the tray to the oven and bake for another 10 minutes, or until the topping is golden and bubbly.
    Serve with roasted potatoes, a fresh salad, or rice.
